Mexican Caviar

This is a Potluck favorite of mine...
It is relatively healthy and easy to make.

Ingredients:
1 15oz Can Pinto Beans - drained
1 15 oz Can Black Beans - drained
1 15oz Can Kidney Beans - drained
1 15 oz Can Corn - drained (or 1 package frozen corn)
2 Large Tomatoes Chopped
1/2 Bunch Green Onions Chopped
1/2 each Red Bell Pepper, Orange Bell Pepper, Yellow Bell Pepper
1/2 small bunch Cilantro - diced
2 Tbsp. Minced Garlic (Or 2 Tbsp. jarred minced garlic)
1 Small Bottle Light Italian Dressing ( I like Kraft the best)
1 Tbsp. McCormick Mexican or Southwest Seasoning
1 tsp. Cumin
a Pinch of Chili Powder

Mix all ingredients together
and let it stand overnight.

Mix well again before serving, it will have a lot more juice once you let it sit overnight.


You can serve it with Chips, Fajitas, Quesadillas, or just eat it all by itself.

This image has been racing through my mind all week.
I have been struggling for a very long time and finally let myself receive help.

I am so blessed to have a knowledge of My Savior. I have had some pretty incredible experiences this week and I would not have had them if it wasn't for Him.
Life is never easy and it never goes quite the way we want it to, but if we rely on The Lord and allow him to help us, we will not fail.

2012

This is my new motto and quote to live by for 2012.
2010 and 2011 were extremely difficult years to live through,
but the most amazing thing is:

I'M STILL HERE!

I made it through, most definitely not perfectly, but I made it.

I found this framed quote at Hobby Lobby on sale, and new I just had to have it.
I'm going to hand it above my bed so that every night when I kneel down to pray, I will look and see those words before I speak to my Father.

He is the reason I am here. He is the reason I have made it. He is the reason that we go through hard things. So that the day when we finally get to go back home, He will be proud of us.

My goal for this year is to strengthen my faith in everything, because I truly think you can never have enough faith.
